Basic Cookies Recipe

Cookies is the favourite item for children. They used to take it as evening snack and also for adults as they used to eat with cup of chai or coffee. These tastes great.


Ingredients:

Basic cookies on a wire rack

             225 gms butter, softened 

             110 gms caster sugar

             275 gms plain flour

             1 teaspoon cinnamon or other spices                    optional)

              75 gms white or milk chocolate chips                   (optional)



Preparation:

               Heat the oven to190C. Cream the butter in a large bowl with a wooden spoon or in a food mixer untill it becomes soft. Now add the sugar and keep beating untill it becomes light and fluffy. Sift in the flour and add the optional ingredients if you are using them. Bring the mixture together with your hands with a figure of eight motion until it forms a dough. You can freeze the dough at this point.

              Now roll the dough into wall-nut sized balls and place them slightly apart from each other on a baking sheet (you don't need to butter or line it) Now flatten the balls a little with the palm of your hand and bake them in the oven for about 10 to 12 minutes untill they turned into golden brown slightly firm on top. Place the cookies on the cooling rack for about 15 minutes before serving.

Lemon Rice Recipe

Lemon rice is very easiest to make at homes. It is a flavourful and sour rice recipe from South India. This is one of the best rice recipe from South India. It is prepared with already cooked or steamed rice and they mix this rice with a spiced lemon and peanut mixture.

Ingredients:

           3 to 4 cups cooked rice (chawal)

           1.5 to 2 tablespoons lemon juice or add as required

           1 teaspoon mustard seeds

           1 teaspoon split and skinned black gram

            2 dry red chillies

            1 to 2 green chillies which are chopped

            12 to 15 curry leaves

            1 generous pinch asafoetida

            half teaspoon turmeric powder

            1 tablespoon cashews ( halved or chopped)

            quarter cup peanuts (optional)

            2 to 3 tablespoon sesame oil

            rock salt or regular salt as required

Preparation:

           
             Take a small frying pan and heat it by pouring 1 to 2 tablespoon sesame oil. First fry the peanuts till it becomes crunchy and keep them aside.

              In the same oil fry the cashew till it becomes into golden colour and keep them aside.

              Now add 1 tablespoon sesame oil to the same frying pan and add those mustard seeds and fry them untill crackled and then now add the blackgram to it.

              Heat it till the blackgram turns golden and then now fry everything on a low flame so that the spices may not burn heavily.
               
             Then add the red chillies and chopped green chillies  and curry leaves into the pan. Boil it till the red chillies change colour.

             Switch off the flame and add the asafoetida and turmeric powder to it and mix it very well.

             Now add the fried peanuts, cashews, lemon juice and salt to it and mix it thoroughly very well.
             Lemon rice should be covered for the flavours and blend it for 4 to 5 minutes.
       
            Now serve the lemon rice with papads or vadams or coconut chutney or you can just have plain lemon rice.

            

Special Chicken Biryani recipe

This is one of the favourite Indian dish that people used to try it in different restaurants to enjoy the different tastes of chicken biryani with family or friends.

Here we can prepare tasty chicken biryani on our own by looking over this recipe.

Ingredients: 
                      
Chicken biryani in a big round serving dish

                     300 gms Basmati Rice, 25 gms Butter, 1 large Onion, finely sliced
                      one bay leaf, three Cardamom pods, a small cinnamon stick,
                      1 tea spoon turmeric, 4 skinless chicken breasts  cut into large chunks,
                      4 table spoon curry paste, 85 gms raisins, 850 ml chicken stock,
                      30gms coriander, half chopped, half leaves picked, 2 table spoon toasted
                      flaked almonds

Preparation:

            1. Soak 300 gms Basmati rice in warm water. Wash it with cold water untill pure water comes out.

            2. Heat 25 gms butter in a saucepanand cook the finely sliced onion by adding 1 bay leaf, 3 cardamom pods and 1 cinnamon stick to it for 10 minutes.

            3. Sprinkle 1 tablespoon turmeric powder in it and now add 4 chicken breasts which cut into 4 large chunks and add 4 tablespoon curry paste. Cook untill aromatic.

            4. Now take the rice and stir it in the saucepan by adding 85 gms raisins and then pour 850 ml chicken stock over it.

            5. Close the pan with a tight fitting lid to not to escape moisture from the pan and boil it hardly for sometime and then lower the heat to miminum and now cook the rice for another 5 minutes.

            6. Turn off the heat and it for 10 minutes. Stir it well by mixing with 15 gms chopped coriander. Before serving it, scatter the remaining 15 gms corriander leaves over the rice with 2 tablespoon toasted almonds.

Ingredients:
                      2 vegetarian bean burgers, quarter red onion, quarter cucumber,
                      half large ripe tomato, quarter small bunch coriander, 2 seeded
                      wholemeal burger buns, 2 tablespoon raita, 2 tablespoon mango
                      chutney, 20gms bombay spicy mix
Method :

Cook the vegetarian bean burgers following pack instructions. Finely chop the red onion, cucumber, tomato and coriander and mix together in a bowl. Lightly toast the burger buns. Divide the raita,burgers, mango chutney, the tomato, onion and cucumber salad and Bobay mix between each bun



Birthday Cake Recipe

Most of the people they dont know that how to make Birthday Cake by their own on their birthday's. they used to buy from outside. We can prepare Birthday Cake on our own without wasting money at buying outside. This is one of the best cake recipe, it tastes very great.

Ingredients:
                 
                     1 cup butter, room temperature                      3 teaspoons baking powder

                     2 cups of white sugar                                      3 cups of all proposed flavours

                     1 teaspoon vanilla extarct                               1 cup milk, room temperature

                     4 eggs, separated, room temperature              1 pinch salt

Preparation:
            
       Prep           cook            ready in
     30 min         30 min           1 hour

                 Preheat the oven upto 350 degrees F. Grease and flour one 9×13 inch pan or three 8 or 9 inch round layer cake pans.

                 Cream both sugar and butter together untill it becomes smooth and fluffy for about 5 minutes. Now add the egg yolks one at a time, beating after each one. Now mix it with the vanilla extarct.

                 After this now sift together the bakind powder, flour and salt. Add the flavour mixture to the creamed mixture in three batches, alternating with the milk. Blend after each addition. Scrape down the slides and bottom of the bowl and beat an additional minute.

                 In a separate bowl, beat the egg whites with a dash of salt untill stiff peaks form. Fold the 1/3rd of the egg whites into the cake batter to make it light weight and gently fold this in the remaining egg whites. Pour batter into the prepared pan.

                Bake in preheated oven untill cake springs back when touched lightly with a fingertip and a teaser inserted in the center comes out clean. These cake layers will be done after baking it for 25 minutes. A 9×13 inch cake may take 35 miutes. Cool on wire rack.

                Finally atlast we will get the tasty birthday cake.

Restaurant styled Fried Rice

This is one of our favourite recipe which we usually ordered frequently in the restarauts. Here we can make the same restaurant styled fired rice in our homes. Just follow the steps orderly to get your favourite fried rice.

Ingredients:
                  
                     2 cups enriched white rice                  2 tablespoons vegetable oil

                     4 cups water                                        2 eggs

                     2/3 cup chopped baby carrots             soy sause to taste

                     half cup frozen green peas                  sesame oil, to taste (optional)

Preparation:

            Take a saucepan and take both rice and water in it. Boil it for sometime and now reduce the heat and cover the saucepan and boilit below the boiling point for 20 minutes.

            Now take another small saucepan, boil the chopped carrots in water for 3 to 5 minutes. Drop the peas into boiling water and cook for sometime and drain out of it.

            Heat wok over high heat. Pour a little oil, then stir in carrots and peas. Cook for about 30 seconds. Now carck the eggs and stir it quickly to scramble with vegetables.

           Now take the mixture and stir it with cooked rice. After stiiring with rice, shake in soy sauce and toss rice to entirely coat with sauce. Now drizzle with sesame oil and toss again.

Baked French Fries

                      half teaspoon garlic powder                       half tea spoon onion powder
                     
                      1 tablespoon olive oil                                  half teaspoon paprika

Preparation:
                   
1. Preheat oven to 450 degrees F (230 degrees C).

2. Cut potatoes into wedges. Mix olive oil, paprika, garlic powder, chilli powder and onion powder together. Mix the potatoes with the oil or spicy mixture and placed on the baking sheet.
3. Bake for 45 min in preheated oven.

4. After 45 min you can get the tasty baked French Fries
